Bulldog Blue from Tolpuddle Goat Cheeses in Tarrawingee, Victoria is so new that it is not even on their website yet.

The idea of creating a matured blue from a feta-style base is not one I have encountered before, and makes for a subtle and interesting cheese, well suited to boards and salads.

The blue mould is surface-grown, with only a few intrustions along spiking paths. The density of the cheese prevents the mould from spreading far from these lines.This results in a very mild blue, with a firm, and surprisingly fresh body, with a salty tang.

The tasting notes recommend muscatels and honey as pairings, but I suspect it would also go extremely well with kalamata olives.

Tolpuddle cheese are only available via limited regional retailers, farmers' markets, and by mail-order within Victoria.
