An aside - Falwasser - Gluten Free Activated Charcoal Crispbread. These have been supplied with both boxes so far and, although I am not a fan of putting charcoal into food, are rather tasty, with the sesame seed flavour coming through rather pleasantly. A startling change to the usual water-crackers, they can provide an unexpected shot of contrast on a cheese-board - but I'd use them sparingly, for fear of appearing too much a fashion victim.

Skipping forward to the February box, we've got another one from Milawa Cheese Co. Milawa White is a semi-hard cheese with a thin, coarse rind. Inside it is like a young gouda or edam in texture - but with a saltier bite than ether. This salty overtone sits on top of a nutty, slightly sweet base, matching it well to the suggested smoked ham or almond accompaniment. It would also match very will with a crisp sharp apple. The tasting notes recommended a semillon, but finding a non-alcoholic one is tricky at best, so we made do with the Edenvale Shiraz, which played off very nicely against the sweetness. Another thing it does extremely well is melt. The cheese flows well, and retains the heat from a blowtorch - something most cheddars struggle with. Melting also develops the nutty tones, and would make an extraordinary ham-and-cheese toasty. A highly eatable cheese, and a solid all-rounder. QZE comes about when you measure something fast enough that it cannot migrate to a superposition state (from which new results can occur), and so returns to the original state. I can see some fun fiction emerging from this, using some sort of macro-quantum effect to freeze time for something. Scientifically dodgy, but good enough for a story. Second off the rank for this month's box is King River Gold from Milawa Cheese Co in (guess what) Milawa Victoria. A washed rind cheese, this has only a mild odour, and is quite an easy cheese to get into, unlike the more potent cousins Taleggio or Limburger. Once past the faint 'old socks' armour, this is has a somewhat salted and slightly nutty flavour to its slightly runny interior. It is very rich - like a double brie in mouth-feel, but despite the saltiness the flavour is much more delicate than that of a brie. The tasting notes recommend serving with a Shiraz, muscatels, and salami. The two extremes of flavour in the muscatels and the salami each do wonders for this cheese. The sweetness of the dried grapes balance the saltiness and the richness of the paste, combining to form quite a magnificent symphony of flavour. By contrast, the salty meat of the salami works to highlight the flavour of the cheese, with the umami of the salami drawing forth the otherwise delicat

First off the rank is the remarkable La Luna of Holy Goat Cheese in Victoria. This Geotrichum rind cheese is sure to convert anyone who thinks 'Goat Cheese' means a chevre. Placing itself between the soft-rinds of Bries and Camemberts and the firm paste of a chevre, this wonder combines the glories of both, while adding a distinctive character of its own. The tasting notes that came with it suggested serving with honey and crisp apple, and it is excellent advice. The rind has a subtle tang, the creamy layer beneath is smooth and rich, and the firm core is bright and fresh. Thoroughly enjoyable, and well worth seeking out if in Victoria or NSW.
